  • 2 pounds potatoes, peeled and diced
  • 1 pound kielbasa, sliced
  • 1 can cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1 small onion, diced

Preparation

  • In a crockpot, layer the diced potatoes at the bottom.
  • Add the sliced kielbasa on top of the potatoes.
  • In a separate bowl, mix together the cream of chicken soup, shredded cheddar cheese, milk, diced onion, salt, and pepper.
  • Pour the soup mixture over the potatoes and kielbasa in the crockpot.
  • Stir gently to combine the ingredients.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender.

Serving

  • Serve warm, enjoying the cheesy and smoky flavors.

Notes

For extra flavor, add garlic powder or herbs like thyme or rosemary. For crunch, consider adding crushed potato chips on top just before serving. Ensure potatoes are cut into even-sized pieces for even cooking. Leftovers can be stored in the refrigerator for 3-4 days. Reheat in the microwave or stovetop.
