Crockpot Cajun Butter Chicken: A Creamy Comfort Bowl

Ingredients
For the Base
- 2 lbs boneless skinless chicken breasts
- 1/2 cup chicken broth
For the Sauce
- 2 tbsp Cajun seasoning blend
- 1/2 cup unsalted butter (cubed)
- 1/2 cup heavy cream
- 1 tbsp cornstarch (mixed with 1 tbsp cold water)
- 1 tsp coarse black pepper
- 1/2 tsp red paprika flakes
To Serve
- 1 cup long grain white rice (uncooked)
- 2 tbsp fresh green parsley (finely chopped)
Instructions
Preparation
- Place the boneless skinless chicken breasts in the bottom of the crockpot.
- In a separate bowl, combine the Cajun seasoning, chicken broth, black pepper, and paprika flakes. Pour this mixture over the chicken in the crockpot.
- Distribute the cubed butter on top of the chicken and sauce mixture.
Cooking
- Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours.
- Visual cue: The chicken should be cooked thoroughly and reach an internal temperature of 165°F (75°C).
- About 30 minutes before serving, stir in the heavy cream and cornstarch mixture, then cover again to allow the sauce to thicken.
- Pro cue: If the sauce appears too thick, add a little more chicken broth to reach the desired consistency.
Serving
- Prepare the long grain white rice according to package instructions while the chicken is finishing.
- Once done, shred the chicken using two forks and stir it back into the sauce. Serve over rice and garnish with finely chopped fresh parsley.
Notes
You can prepare the chicken and sauce mixture the night before and refrigerate it. Serve with crusty bread or garlic bread to soak up the delicious sauce.
