Ingredients

  • 4 pieces chicken breasts
  • 1 cup long grain white rice
  • 2 cans cream of mushroom soup
  • 1 can chicken broth
  • 1 piece onion, diced
  • 1 teaspoon garlic powder
  • to taste salt and pepper
  • 1 cup frozen peas (optional) Stir in during the last 30 minutes of cooking.

Preparation

  • Place the chicken breasts at the bottom of the slow cooker.
  • In a separate bowl, mix together the rice, cream of mushroom soup, chicken broth, diced onion, garlic powder, salt, and pepper.
  • Pour the mixture over the chicken in the slow cooker.

Cooking

  • Cover and cook on low for 6-8 hours, until the chicken is cooked through and the rice is tender.
  • If using, stir in frozen peas during the last 30 minutes of cooking.

Serving

  • Serve this dish hot straight from the slow cooker.
  • It goes well with a simple side salad or some crusty bread to soak up the creamy sauce.
  • You can also sprinkle some fresh herbs on top for added flavor and color.

Notes

To store leftovers, let the dish cool completely. Place it in an airtight container and keep it in the refrigerator for about 3-4 days. You can also freeze it for longer storage, making sure to thaw it in the refrigerator before reheating.
