  • 1 cup chicken broth
  • 1 cup heavy cream Can be substituted with half-and-half or low-fat cream for a lighter version.
  • 1 cup sun-dried tomatoes in oil, drained and chopped Adjust based on preference.
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup grated Parmesan cheese
  • to taste leaves fresh basil, for garnishing

Preparation

  • Place the chicken breasts in the bottom of your crock pot.
  • In a bowl, whisk together chicken broth, heavy cream, sun-dried tomatoes, minced garlic, Italian seasoning, salt, and pepper.
  • Pour the creamy mixture over the chicken in the crock pot, ensuring it covers all the pieces.
  • Sprinkle the grated Parmesan cheese over the top for an added layer of flavor.

Cooking

  • Cover the crock pot and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is cooked through and tender.
  • Once done, remove the chicken and let it rest for a few minutes before slicing it.
  • Stir the sauce in the crock pot to combine all the delicious flavors.
  • Serve the sauce over the sliced chicken.
  • Garnish with fresh basil leaves before serving.

Notes

For extra flavor, marinate the chicken in the broth and seasonings for a few hours before cooking. To thicken the sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water, then stir it into the sauce during the last 30 minutes of cooking. You can substitute the heavy cream with coconut milk for a dairy-free version. Add some chopped spinach or kale for extra nutrition and color.
