  • 1 large bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced

For the Sauce

  • 1 can diced tomatoes (14.5 oz)
  • 2 cups chicken broth Vegetable broth is a good substitution for a vegetarian approach.
  • 1 cup long-grain rice Brown rice can be used, though you may need to adjust cooking times and liquid.
  • 1 tablespoon Cajun seasoning

Preparation

  • In a Crock Pot, combine the diced chicken, sliced sausage, chopped onion, bell pepper, celery, and minced garlic.

Add the Sauce Ingredients

  • Add the canned diced tomatoes, chicken broth, rice, Cajun seasoning, and season with salt and pepper. Stir everything to ensure it's well mixed.

Set the Crock Pot

  • Cover the pot and cook on low for 6-8 hours or on high for 3-4 hours.

Stir and Serve

  • Once cooking is done, stir well before serving. Garnish with green onions for added freshness and color.
