Ingredients

For the Base

  • 1 cup chicken broth
  • 1 piece bell pepper, chopped
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

For the Sauce

  • 1 cup heavy cream Can substitute half-and-half for a lighter version.
  • 1 tablespoon Cajun seasoning Use high-quality or homemade for better flavor.

To Serve

  • 1 cup pasta (penne or rotini) A gluten-free pasta can be used for a gluten-free option.
  • Grated Parmesan cheese, for serving Optional garnish.

Instructions

Preparation

  • In a crock pot, add the chicken breasts, chicken broth, heavy cream, Cajun seasoning, chopped bell pepper, onion, minced garlic, salt, and pepper.

Cooking

  • Cover the crock pot and cook on low for 4-6 hours or until the chicken is fully cooked and tender.
  • Carefully remove the chicken from the crock pot and shred it using two forks. Return the shredded chicken back to the pot.
  • Stir in the uncooked pasta into the mixture. Cover and cook on high for an additional 20-30 minutes or until the pasta is tender.

Serving

  • Serve hot, garnished with freshly grated Parmesan cheese.

Notes

Warming plates before serving helps keep the dish hot longer. A sprinkle of Cajun seasoning on top can enhance visual appeal. For a creamy finish, try drizzling some extra heavy cream over individual servings. Always taste before serving; adjust seasoning if necessary.
