Ingredients
  

For the Chicken

  • 6 medium chicken legs, skin-on and bone-in

For the Sauce

  • 3 tablespoons honey Can be replaced with maple syrup or agave.
  • 2 tablespoons soy sauce (preferably low sodium) Coconut aminos can be used as a gluten-free alternative.
  • 4 large garlic cloves, minced Use freshly minced garlic for better flavor.
  • 2 tablespoons olive oil Can use canola or avocado oil as a neutral flavor.
  • 1 tablespoon rice vinegar
  • 1 teaspoon fresh ginger, grated (optional) Can be omitted if not available.
  • freshly cracked black pepper, to taste

Preparation

  • Preheat your oven to 425°F (220°C) to achieve crispy skin on the chicken.
  • In a mixing bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, and grated ginger (if using). Set aside.
  • Pat the chicken legs dry thoroughly using paper towels. Lightly brush with olive oil and sprinkle with freshly cracked black pepper.

Cooking

  • Place the chicken legs skin-side up on a wire rack set over a rimmed baking sheet. Bake for 25 minutes.
  • Remove the chicken from the oven. Brush half of the glaze evenly over each leg and return to the oven for another 10 minutes.
  • Brush the remaining glaze on the chicken and broil on high for 2-3 minutes. Watch carefully to avoid burning.
  • Let the chicken rest for about 5 minutes before serving.

Notes

Perfect for busy weeknights, these chicken legs can be served with rice, vegetables, or as a party dish. Make ahead by marinating the chicken a few hours before cooking.
