  • 2 pounds potatoes Yukon gold or russet potatoes work best.
  • 2 tablespoons olive oil Can be replaced with avocado oil.
  • 1 cup grated parmesan cheese For a lighter option, use nutritional yeast or lower-fat cheese.
  • 1 teaspoon garlic powder Fresh minced garlic can be used as a substitute.
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the potatoes, then cut them into wedges or cubes.
  • In a large mixing bowl, toss the potato pieces with olive oil, garlic powder, salt, pepper, and grated parmesan cheese until they are well coated.

Baking

  • Spread the coated potatoes in a single layer on a baking sheet lined with parchment paper.
  • Bake for 25-30 minutes, flipping the potatoes halfway through, until they are golden brown and crispy.

Serving

  • Optionally, garnish the potatoes with fresh herbs before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10-15 minutes for best results.
