  • 2 medium Zucchini If zucchini isn't available, yellow squash can be used as a substitute.
  • 1 tablespoon Olive oil Can also use canola or avocado oil.
  • 1 teaspoon Garlic powder Fresh minced garlic can be used for more flavor.
  • Salt and pepper Adjust these according to dietary preferences.

For the Topping

  • ½ cup Grated cheese (e.g., Parmesan or Cheddar) Feel free to mix with other cheeses like Mozzarella.

Preparation

  • Preheat your air fryer to 400°F (200°C) to ensure a crispy texture.
  • Slice the zucchini into rounds about ½ inch thick. The thinner the slices, the crisper they will get.
  • In a bowl, toss the zucchini rounds with olive oil, garlic powder, salt, and pepper until they are evenly coated.
  • Sprinkle the grated cheese generously over the seasoned zucchini.

Cooking

  • Place the zucchini rounds in the air fryer basket in a single layer, ensuring they aren’t overlapping.
  • Cook for 10-15 minutes until they are crispy and golden brown. Keep an eye on them in the last couple of minutes to avoid overcooking.

Notes

You can slice and season the zucchini ahead of time; store it in the refrigerator for up to 2 hours before cooking. Leftover zucchini can be stored in an airtight container in the fridge for 2-3 days. Avoid freezing as the texture changes significantly when frozen.
