Ingredients
  

For the Chicken

  • 1 lb chicken thighs, boneless, skinless, cut into bite-sized pieces You can use chicken breast instead of thighs for a leaner option.
  • 1/2 cup buttermilk For marinating the chicken.
  • 1 cup all-purpose flour Substitute with gluten-free flour if needed.
  • 1/2 cup cornstarch
  • 1 tsp paprika Adds smoky flavor and color.
  • 1 tsp garlic powder Enhances flavor.
  • 1/2 tsp onion powder Provides sweetness and depth.
  • to taste Salt and pepper For seasoning.
  • Vegetable oil For frying.

For the Bang Bang Sauce

  • 1/4 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha Adjust based on spice preference.
  • 1 tbsp honey Balances spiciness.

To Serve

  • 2 cups jasmine rice, cooked
  • 1 cup lettuce, shredded
  • 1/2 cup carrots, shredded
  • 1/4 cup green onions, chopped
  • 1 tbsp sesame seeds

Instructions
 

Preparation

  • Marinate the chicken pieces in buttermilk for at least 30 minutes in the refrigerator.
  • In a large bowl, whisk together the flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper.

Coating and Frying

  • Remove the chicken from the buttermilk, allowing the excess to drip off. Dredge the chicken pieces in the flour mixture, ensuring each piece is well coated.
  • In a deep skillet or fryer, heat vegetable oil to 350°F (175°C). Use enough oil to allow the chicken to fry without sticking together.
  • Fry the chicken in batches for about 5-6 minutes per batch, or until golden brown and crispy. Remove and drain on paper towels.

Sauce and Assembly

  • While the chicken cools, mix mayonnaise, sweet chili sauce, sriracha, and honey in a small bowl until well combined.
  • Place a generous scoop of jasmine rice at the bottom of each bowl. Top with shredded lettuce, carrots, fried chicken, and drizzle generously with the Bang Bang sauce.
  • Finish your bowl with a sprinkle of chopped green onions and sesame seeds before serving.

Notes

Allow chicken to rest after frying to retain crunch. Use a thermometer to maintain oil temperature for perfect frying. For added taste, season the rice with a bit of salt or butter. Consider a second layer of sauce for extra flavor.
