  • 4 pieces salmon fillets Use wild or farmed salmon based on preference.
  • 2 tablespoons olive oil For cooking the salmon.
  • 2 tablespoons butter Adds richness to the dish.
  • 3 cloves garlic Minced.
  • 1 cup cherry tomatoes Fresh and halved.
  • 3 cups spinach Fresh, washed.
  • 1/4 cup fresh basil Chopped, for garnish.
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version.
  • 1/2 cup parmesan cheese Grated.
  • to taste salt For seasoning.
  • to taste pepper For seasoning.

Instructions
 

Cooking

  • Heat olive oil and butter in a skillet over medium-high heat.
  • Season salmon fillets with salt and pepper. Add to the skillet and sear until golden brown, about 4-5 minutes per side.
  • Remove salmon from the skillet and set aside.
  • In the same skillet, add minced garlic and cook until fragrant.
  • Add cherry tomatoes and cook until they start to burst.
  • Stir in spinach and cook until wilted.
  • Pour in heavy cream and sprinkle in parmesan cheese. Stir until smooth.
  • Return the salmon to the skillet and coat with the sauce.
  • Garnish with fresh basil and serve immediately.

Notes

Serve hot with rice, pasta, or crusty bread. Adding a fresh salad on the side can enhance the meal. To store leftovers, place salmon and sauce in an airtight container for up to 2-3 days in the refrigerator. Reheat gently in a skillet over low heat.
