For the Sauce

  • 2 tbsp Olive Oil Can substitute with butter.
  • 2-3 cloves Garlic (Freshly minced)
  • 2 cups Fresh Spinach Can substitute with kale.
  • 1 cup Heavy Cream Substitute with half-and-half or coconut milk for less calories.
  • 1/2 cup Parmesan Cheese Can use nutritional yeast for a vegan option.

Preparation

  • Begin by cooking the pasta in a large pot according to package directions. Be sure to salt the water for flavor.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  • Add the sliced mushrooms and cook until they are golden, about 5-7 minutes.
  • Once the mushrooms are browned, add the spinach and cook until wilted, about 2-3 minutes.
  • Pour in the heavy cream and sprinkle in the Parmesan cheese. Stir until the cheese has melted and the sauce thickens slightly.
  • Drain the cooked pasta and toss it in the skillet with the sauce and vegetables. Mix well to evenly coat the pasta.
  • Add salt and pepper to taste. Adjust the seasonings as needed.

Notes

Drizzling with olive oil before serving adds a touch of richness. A sprinkle of fresh parsley can enhance the visual appeal. For a gourmet touch, consider infusing the olive oil with herbs before using.
