  • 1/2 cup grated Parmesan cheese Can substitute with other cheeses like feta or mozzarella.

Preparation

  • Heat olive oil in a pan over medium heat until shimmering.
  • Season the chicken breasts generously with salt and pepper. Place them in the pan and cook until golden brown and cooked through, about 5-7 minutes on each side.
  • Once cooked, remove the chicken from the pan and set aside on a plate.

Sauce Preparation

  • In the same pan, add minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the chicken broth, bringing it to a simmer. Stir in heavy cream and Parmesan cheese until everything is melted and well combined.
  • Add the fresh spinach to the sauce and cook until wilted.
  • Return the chicken to the pan, ensuring it gets nicely coated in the creamy sauce.

Serving

  • Serve the dish warm, garnished with additional cheese or seasoning if desired.

Notes

This dish can be stored in the refrigerator for up to 3 days. Reheat gently on the stovetop over low heat, adding a splash of broth if too thick. It’s best eaten fresh due to the cream sauce, which may separate when frozen.
