Ingredients
  

For the Base

  • 6 pieces chicken drumsticks You can substitute with chicken thighs for a different texture.
  • 1 tbsp olive oil Can be replaced with vegetable oil or butter.
  • to taste salt and pepper
  • 1 tsp smoked paprika

For the Sauce

  • 1 tbsp butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp crushed red pepper flakes Optional
  • 1 tbsp all-purpose flour
  • 1 cup chicken broth Use vegetable broth for vegetarian option.
  • 3/4 cup heavy cream For a lighter option, use half-and-half or Greek yogurt.
  • 1 tbsp tomato paste
  • 1 tsp Dijon mustard
  • 1 tbsp chopped fresh parsley Plus more for garnish.

To Serve

  • 2 cups cooked white rice

Preparation

  • Preheat your oven to 400°F (200°C).
  • Pat chicken drumsticks dry with paper towels. Season them generously with salt, pepper, and smoked paprika.

Searing and Roasting the Chicken

  • In a large ovenproof skillet or pan, heat the olive oil over medium-high heat. Place the drumsticks in the pan and sear them on all sides until golden brown, about 5-6 minutes.
  • After searing, transfer the skillet to the preheated oven and roast the chicken for 20-25 minutes or until fully cooked.

Making the Sauce

  • While the chicken cooks, melt butter in another saucepan over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  • Stir in thyme, red pepper flakes (if using), and flour. Cook for 1 minute.
  • Slowly whisk in the chicken broth, bringing it to a simmer until slightly thickened.
  • Stir in the cream, tomato paste, and Dijon mustard. Simmer gently for an additional 5-6 minutes. Add the chopped parsley to finish.

Serving

  • Once the chicken is done, carefully remove it from the oven. Pour the creamy sauce over the chicken drumsticks and let them simmer together for 2-3 minutes.
  • Serve the chicken hot over a bed of cooked white rice, garnished with additional chopped parsley if desired.

Notes

Add a sprinkle of parmesan cheese on the sauce for added richness. Serve immediately after combining with the sauce for ideal texture.
