Ingredients

For the Base

  • 4 pieces chicken thighs Bone-in or boneless
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the Sauce

  • 4 cloves garlic, minced Freshly minced for better flavor
  • 2 pieces shallots, finely chopped Can be replaced with finely chopped onions
  • 1 tablespoon Dijon mustard
  • 1 cup heavy cream Reduced-fat cream or Greek yogurt can be used for lighter version

To Serve

  • Fresh parsley for garnish

Instructions

Preparation

  • Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Season the chicken thighs with salt and pepper, then add them to the skillet. Cook until golden brown on both sides and cooked through, about 7-8 minutes per side. Remove chicken and set aside.
  • In the same skillet, add the minced garlic and chopped shallots. Sauté until fragrant, about 2 minutes.
  • Stir in the Dijon mustard and cook for another minute.
  • Pour in the heavy cream, stirring to combine. Let it simmer for a few minutes until it thickens slightly.
  • Return the chicken to the skillet, coating it in the sauce. Cook for an additional 2-3 minutes to heat through.
  • Serve hot, garnished with fresh parsley to add a pop of color and flavor.

Notes

For a cheesy twist, stir in grated Parmesan cheese at the end. A sprinkle of fresh herbs makes for an appealing presentation. Serve with crusty bread to soak up the sauce.
