  • 4 pieces boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup spinach, chopped Use fresh for better taste.
  • 1/2 cup grated Parmesan cheese Different cheeses like mozzarella or feta can be used.
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning Adjust to taste.
  • Salt and pepper to taste

Instructions
 

Preparation

  • Place the chicken breasts in the crockpot.
  • Add cherry tomatoes, heavy cream, chicken broth, spinach, Parmesan cheese, garlic, and Italian seasoning over the chicken.
  • Season with salt and pepper.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through.
  • Shred the chicken in the crockpot and stir to combine with the sauce.

Notes

Serves well with pasta, rice, or on its own. For added flavor, sprinkle fresh herbs on top. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months.
