  • 1 pound boneless, skinless chicken breasts
  • 2 cups cooked pasta (penne or rotini)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth Adjust for desired thickness
  • 1 cup grated Parmesan cheese For serving, optional
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup frozen peas (optional)
  • Fresh parsley for garnish (optional)

Cooking

  • In your crockpot, combine chicken breasts, cream of chicken soup, chicken broth, Italian seasoning, salt, and pepper.
  • Cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender.
  • Once cooked, shred the chicken in the crockpot using two forks.
  • Stir in cooked pasta and frozen peas, mix well, and let it heat through for an additional 10-15 minutes.

Serving

  • Serve topped with grated Parmesan cheese and fresh parsley if desired.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze in portions for longer storage. Reheat in the microwave or on the stove.
