  • 2 tablespoons Olive oil
  • 2 cloves Garlic Chopped
  • 1 medium Onion Chopped
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Green onions For garnish

Preparation

  • Cook the rice according to package instructions.
  • Season the chicken breasts with Cajun seasoning, salt, and pepper.

Cooking

  • In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened.
  • Add the chicken breasts to the skillet and cook until fully cooked, about 5-7 minutes per side.
  • Remove the chicken and slice it.
  • In the same skillet, add heavy cream and Parmesan cheese, stirring until smooth.
  • Return the sliced chicken to the skillet and coat with the sauce.

Serving

  • Serve the creamy Cajun chicken over a bed of rice, garnished with green onions.

Notes

For extra flavor, marinate the chicken in the Cajun seasoning for a few hours before cooking. This dish goes well with a side salad or steamed vegetables for a complete meal. You can also make this with shrimp or sausage instead of chicken.
