  • 1 lb chicken breasts, cooked and shredded Consider using rotisserie chicken for ease.

For the Sauce

  • 1 cup cream cheese Light cream cheese can be used for a lower calorie option.
  • 1 cup shredded cheddar cheese Can substitute with other cheese varieties.
  • 1 cup chicken broth
  • 1 packet ranch seasoning Homemade ranch seasoning is an option.
  • Salt and pepper to taste

To Serve

  • Chopped green onions for garnish

Preparation

  • In a large pot, combine the cream cheese, chicken broth, ranch seasoning, and shredded chicken over medium heat. Stir until the cream cheese is melted and the mixture is creamy.
  • Add the cooked penne pasta and shredded cheddar cheese to the pot. Stir until well combined and heated through.
  • Season with salt and pepper to taste. Serve warm, garnished with chopped green onions.

Notes

Make-ahead by preparing shredded chicken and sauce separately. Store in the fridge for up to 3 days. For freezing, cool completely and store in an airtight container for up to 2 months. Reheat on the stovetop with added chicken broth as needed.
