  • 1 piece red bell pepper, diced
  • 1 piece green bell pepper, diced
  • 1 small red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1 piece avocado, diced Can be omitted or reduced to lower fat
  • 1/4 cup fresh cilantro, chopped

For the Dressing

  • 1 piece lime, juiced Adjust to taste
  • to taste Salt and pepper
  • optional Greek or Italian dressing Can substitute for lime dressing

Preparation

  • In a large bowl, combine the black beans, corn, diced bell peppers, diced red onion, cherry tomatoes, diced avocado, and chopped cilantro.
  • In a small bowl, whisk together the lime juice, salt, and pepper until fully combined.
  • Pour the dressing over the bean mixture and toss gently to coat all ingredients evenly.
  • You can serve it immediately or cover the bowl and chill in the refrigerator for about 30 minutes to let the flavors meld together.
