Preparation

  • Melt the dark chocolate chips in a microwave or double boiler until smooth.
  • In a blender, combine the cottage cheese, melted chocolate, honey (or maple syrup), and vanilla extract.
  • Blend until creamy and smooth, scraping down the sides as needed.
  • Spoon the mousse into serving dishes and refrigerate for at least 30 minutes before serving.

Notes

Serve in small bowls or glasses. Top with fresh berries, whipped cream, or nuts for added flavor and texture. Store in an airtight container in the refrigerator for 3 to 4 days.
