Preparation

  • In a large mixing bowl, combine the cottage cheese and chickpeas.
  • Add the cherry tomatoes, cucumber, and red onion.

Notes

You can serve this salad as a main dish or a side. It pairs well with grilled chicken, fish, or any other protein. Store leftovers in an airtight container in the refrigerator and consume within a couple of days for optimal freshness. The longer it sits, the more the vegetables may soften.
