Ingredients
  

Dry Ingredients

  • 2 cups flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt

Wet Ingredients

  • 1 large egg
  • 1⅛ cups sugar
  • ½ cup vegetable or canola oil
  • 2 tablespoons buttermilk or milk
  • ½ teaspoon vanilla
  • 3 whole bananas, mashed very well Use very ripe bananas for the best flavor.

Optional Ingredients

  • ½ cup chopped walnuts Optional for topping.

Preparation

  • Preheat the oven to 325 degrees Fahrenheit.
  • Add the flour, baking soda, and salt to a small bowl and set aside.
  • In a large bowl, mix the egg, sugar, and oil until well combined.
  • Add the dry ingredients to the wet ingredients and stir well. The mixture will be thick and dry.
  • Next, add the milk, vanilla, and mashed bananas, stirring until all ingredients are incorporated.
  • If using, mix in the walnuts and then pour the batter into a loaf pan.

Baking

  • Bake in the preheated oven for 50-75 minutes, checking regularly until a knife comes out clean.

Notes

Enjoy your banana bread warm or at room temperature. Serve it plain, or with a pat of butter or cream cheese spread. Store by wrapping it in plastic wrap or aluminum foil, and it will stay fresh for about 3-4 days at room temperature, or freeze for up to 3 months.
