Preparation

  • Whisk together coconut milk, lime juice, minced garlic, olive oil, salt, and pepper in a bowl to create the marinade.
  • Place chicken breasts in a shallow dish or zip-top bag, pour the marinade over them, turn to coat, cover, and refrigerate for at least 30 minutes.

Cooking

  • Heat a skillet over medium heat, adding a small splash of olive oil until shimmering.
  • Remove chicken from the marinade, letting excess drip off, and cook for 6–7 minutes on one side until browned.
  • Flip the chicken and cook for another 6–7 minutes, ensuring the internal temperature reaches 165°F (74°C).

Serving

  • Let the chicken rest for 3–5 minutes, then slice or serve whole, garnished with fresh cilantro.
  • Pair with rice, greens, or prepare into tacos as desired.

Notes

For extra flavor, consider adding cayenne pepper or honey to the marinade. Always remember to rest the chicken before serving to allow juices to redistribute.
