Ingredients
  

For the Base

  • 4 cups watermelon (cut into 1-inch uniform cubes) Choose ripe watermelon for the best sweetness.
  • 3.5 cups arugula Mix just before serving to keep the arugula crisp.
  • 4.5 oz feta cheese (crumbled) Try goat cheese for a creamier texture.
  • 1/4 cup fresh mint (finely ribboned) Fresh basil can be a tasty substitute.

For the Sauce

  • 3 tablespoons extra virgin olive oil Avocado oil can be used for a different flavor profile.
  • 1 each lemon (zested and juiced) Use a microplane to zest the lemon easily.
  • 1 tablespoon balsamic glaze Drizzle additional balsamic glaze as a finishing touch.
  • 1/4 teaspoon black pepper Use to taste for flavor enhancement.
  • 1/8 teaspoon sea salt Adjust to taste.

To Serve

  • 2 tablespoons toasted pine nuts Toast in a dry skillet for extra flavor.

Preparation

  • Cut the watermelon into uniform 1-inch cubes and place them in a large bowl.
  • Zest the lemon and juice it, then finely ribbon the fresh mint by stacking the leaves and slicing thinly.
  • Crumble the feta cheese into bite-sized pieces and measure out the toasted pine nuts and arugula.

Whisk the Dressing

  • In a small bowl, whisk together the extra virgin olive oil, lemon zest, lemon juice, and balsamic glaze until well combined.

Combine Salad Base

  • In a large mixing bowl, place the arugula, then add the watermelon cubes on top.
  • Pour the dressing over the greens and watermelon, and gently toss to coat everything evenly.

Serve the Salad

  • Divide the dressed salad among plates or transfer it to a serving platter.
  • Top with crumbled feta cheese, ribboned mint, toasted pine nuts, and a sprinkle of black pepper.
  • Serve immediately while the watermelon is still cold and crisp.

Notes

This salad is easy to prepare and can be made ahead. Store in an airtight container in the fridge for up to 2 days. Freezing is not recommended due to texture changes.
