  • 3 ripe bananas, mashed Use very ripe bananas for best flavor and moisture.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Do not overmix after adding flour.
  • 1 tablespoon cinnamon
  • 1/4 cup brown sugar

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 4x8-inch loaf pan.
  • In a mixing bowl, mix the melted butter with the mashed bananas.
  • Stir in the baking soda and salt.
  • Mix in the sugar, egg, and vanilla.
  • Blend in the flour until just incorporated.
  • In a separate bowl, combine the cinnamon and brown sugar.

Baking

  • Pour half of the banana bread batter into the prepared pan, followed by half of the cinnamon mixture.
  • Add the remaining batter, and top with the rest of the cinnamon mixture.
  • Use a knife to swirl the two layers together.
  • Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Slice the bread and serve warm or at room temperature. It is good plain, with a pat of butter, or a light spread of cream cheese. Store wrapped tightly in plastic wrap or in an airtight container for 2-3 days at room temperature, or freeze slices for up to 3 months. You can add 1/2 cup chopped nuts (walnuts or pecans) or stir in 1/2 cup chocolate chips for a sweeter version. Use maple syrup instead of some sugar for a different flavor.
