  • 1 large egg
  • ½ cup unsalted butter, melted
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup light brown sugar, packed
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon, divided

For Topping

  • 3 tablespoons granulated sugar

Preparation

  • Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  • In a large bowl, whisk together the melted butter and brown sugar until smooth.
  • Add the egg, honey, and vanilla extract to the bowl and whisk until well combined.
  • Gradually stir in the flour, salt, and ½ teaspoon of cinnamon until just combined. Be careful not to overmix.
  • Pour the batter into the prepared pan and spread it evenly.
  • In a small bowl, mix the granulated sugar with the remaining ½ teaspoon of cinnamon. Sprinkle this mixture over the batter.
  • Bake in the preheated oven for 22–25 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the blondies to cool completely in the pan before cutting them into squares.

Notes

These blondies can be served warm or at room temperature. They can be enjoyed plain or paired with a scoop of vanilla ice cream. For added sweetness, drizzle some honey on top or sprinkle with extra cinnamon.
