Ingredients

For the Roll-Ups

  • 12 slices white bread (soft sandwich bread, brioche, or challah)
  • 3 tbsp butter, softened (plus more for cooking) Use additional for cooking
  • ¼ cup light brown sugar
  • 1 tsp cinnamon For the filling
  • 2 large eggs
  • 3 tbsp milk
  • 3 tbsp granulated sugar For coating
  • 1 tsp cinnamon For coating
  • Powdered sugar (optional, for serving) For garnish

Instructions

Preparation

  • Flatten each slice of bread with a rolling pin or by pressing with your hands.
  • In a small bowl, mix softened butter, brown sugar, and cinnamon until combined. Spread a thin layer of the mixture onto each slice of bread.
  • Roll each slice tightly into a log and set aside.

Cooking

  • In a bowl, whisk together eggs and milk to make the French toast batter.
  • Heat a nonstick skillet over medium heat and melt a little butter in the pan.
  • Dip each roll-up into the egg mixture, ensuring it’s fully coated but not soggy. Place in the skillet and cook for 2-3 minutes per side, turning often, until golden brown and crispy.
  • While still warm, roll the cooked roll-ups in a mix of granulated sugar and cinnamon for an extra-sweet finish.

Serving

  • Dust with powdered sugar, drizzle with maple syrup, or dip in cream cheese glaze.

Notes

Use fresh, soft bread for the best results. Customize the filling by adding nuts or raisins for extra flavor. Avoid over-soaking to keep them from getting soggy. For variations, use flavored bread like cinnamon-raisin or chocolate, or include cream cheese filling for richness. Leftovers can be stored in an airtight container in the refrigerator for 2-3 days.
