  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened Make sure butter is at room temperature.
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg Can substitute with flaxseed meal or applesauce.
  • 2 tsp vanilla extract

For the Filling

  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon Adjust to taste.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, whisk together flour, baking powder, salt, and cinnamon.
  • In another bowl, cream softened butter with granulated and brown sugars until fluffy.
  • Beat in the egg and vanilla extract until smooth.
  • Gradually mix dry ingredients into the wet mixture until just combined.
  • Prepare the filling by combining brown sugar and cinnamon in a small bowl.

Baking

  • Spread half of the dough on parchment paper, sprinkle with filling, and roll it up tightly.
  • Slice into rounds and place on a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes or until golden brown.

Notes

These cookies are best enjoyed warm. You can drizzle with icing made from powdered sugar and milk or serve with coffee or tea. For longer storage, freeze for up to 3 months, separating layers with parchment paper.
