Filling

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, whisk together flour, baking powder, salt, and cinnamon.
  • In another bowl, cream softened butter with granulated and brown sugars until fluffy.
  • Beat in the egg and vanilla extract until smooth.
  • Gradually mix dry ingredients into the wet mixture until just combined.
  • Prepare the filling by combining brown sugar and cinnamon in a small bowl.

Assembly

  • Spread half of the dough on parchment paper, sprinkle with filling, and roll it up tightly.
  • Slice into rounds and place on a baking sheet lined with parchment paper.

Baking

  • Bake for 10-12 minutes or until golden brown.

Notes

These cookies are best served warm. You can enjoy them as is or drizzle icing on top for extra sweetness. For storage, keep in an airtight container at room temperature for about a week, or freeze for up to three months.
