  • 3 pieces ripe bananas Use very ripe bananas for best flavor.
  • 1/3 cup melted butter Melt before mixing.
  • 1 teaspoon baking soda
  • Pinch salt
  • 3/4 cup sugar Can be adjusted for sweetness.
  • 1 large egg beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Do not overmix after adding.
  • 1/2 cup chocolate chips Toss in a little flour before adding to prevent sinking.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
  • Mix in the baking soda and salt.
  • Add the sugar, beaten egg, and vanilla extract; mix until well combined.
  • Stir in the flour and chocolate chips until just incorporated.
  • Pour the batter into a greased loaf pan.

Baking

  • Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
  • Allow to cool before slicing.

Notes

Slice and serve warm or at room temperature. Add a smear of butter or cream cheese. Refrigerate wrapped to keep fresh or freeze slices for later.
