  • 1 lb chicken sausage, sliced Use any type of chicken sausage, such as spicy or mild.
  • 2 cups broccoli florets Feel free to add other vegetables for additional color and nutrients.
  • 1.5 cups orzo pasta You can use whole wheat or gluten-free orzo.
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 4 cups chicken broth For a vegetarian version, use vegetable broth.
  • 0.5 cup grated Parmesan cheese You can experiment with different cheeses.
  • to taste Salt and pepper

Preparation

  • In a large skillet, cook the chicken sausage slices until browned. Remove from the skillet and set aside.
  • In the same skillet, sauté the garlic and onion until fragrant.
  • Add the broccoli florets and cook until slightly tender.

Cooking

  • Stir in the orzo pasta and chicken broth. Bring to a simmer.
  • Cover and cook for about 10-12 minutes or until the orzo is cooked through.
  • Add the cooked chicken sausage back to the skillet and mix well.
  • Sprinkle Parmesan cheese over the dish and season with salt and pepper.

Notes

Serve Chicken Sausage and Broccoli Orzo warm, straight from the skillet. For extra flavor, add an extra sprinkle of grated Parmesan cheese on top. Pairs well with a light salad or crusty bread.
