Preparation

  • In a large skillet, heat olive oil over medium heat.
  • Season the chicken breasts with salt and pepper, and brown them in the skillet for about 5 minutes on each side.
  • Remove the chicken and set aside.
  • In the same skillet, add the chopped onion and cook until translucent.
  • Add the sliced apples and cook for another 2-3 minutes.
  • Pour in the apple cider and stir in thyme.
  • Return the chicken to the skillet, cover, and simmer for about 20 minutes until the chicken is cooked through.

Serving

  • Serve Chicken Normandy hot, garnished with fresh thyme if desired.
  • It pairs wonderfully with a side of rice or crusty bread.
  • A simple green salad also makes a great accompaniment.

Notes

For extra flavor, consider marinating the chicken in the apple cider for a few hours before cooking. Feel free to add carrots or celery for more texture and flavor. Adjust sweetness by choosing different apples, such as Fuji or Honeycrisp.
