Ingredients
  

For the Koftas

  • 500 grams ground chicken Ground turkey or lean beef can be used as substitutes.
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped Consider substituting with cilantro for a different flavor.
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

For the Garlic Yogurt Sauce

  • 1 cup plain yogurt Can substitute with non-dairy yogurt for lactose-free option.
  • 2 tablespoons freshly squeezed lemon juice Freshly squeezed is best, but bottled can be used in a pinch.
  • 1 pinch salt

To Serve

  • 2 tablespoons olive oil for grilling

Preparation

  • In a large bowl, combine the ground chicken, chopped onion, minced garlic, parsley, cumin, coriander, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  • Using your hands, form the chicken mixture into small oval-shaped koftas, about 2-3 inches long. Make sure they are compact to hold together while grilling.

Cooking

  • Preheat your grill over medium heat and brush it with olive oil to prevent sticking.
  • Place the koftas on the grill and cook for about 10-12 minutes, turning occasionally until they are golden brown and cooked through, reaching an internal temperature of 165°F (75°C).

Prepare the Sauce

  • In a separate bowl, mix yogurt, lemon juice, and a pinch of salt. Stir until well combined and creamy.

Serving

  • Serve the grilled koftas with the garlic yogurt sauce on the side for dipping.

Notes

Consider chilling the mixture for 30 minutes before shaping to help the koftas hold their shape. Avoid overcrowding on the grill and use wet hands when shaping the koftas to prevent sticking.
