  • 1 large bell pepper, chopped Feel free to mix in other veggies such as snap peas, carrots, or cauliflower.
  • 1 cup broccoli florets

For the Sauce

  • 4 cloves garlic, minced Use fresh garlic for the best flavor; avoid pre-minced garlic if possible.
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional) This can be omitted for a lighter sauce.
  • 1 tablespoon cornstarch You can use all-purpose flour or arrowroot powder as alternatives.
  • Salt and pepper to taste Adjust according to your preference.

To Serve

  • Cooked rice Serve the chicken in garlic sauce over cooked rice.

Preparation

  • In a large skillet, heat the vegetable oil over medium-high heat until shimmering.
  • Add the chicken pieces to the skillet. Cook them until they are browned and fully cooked, about 5-7 minutes.
  • Stir in the minced garlic and sauté for about 30 seconds until it becomes fragrant.
  • Introduce the chopped bell pepper and broccoli florets to the skillet. Cook for an additional 3-4 minutes, or until the vegetables are just tender.
  • In a small bowl, mix together soy sauce, oyster sauce (if using), cornstarch, salt, and pepper until combined.
  • Pour the sauce over the chicken and vegetables. Stir well to coat everything evenly and cook for an extra 2-3 minutes, until the sauce thickens.
  • Serve the chicken in garlic sauce over cooked rice, enjoying the savory flavors combined with tender chicken and crisp vegetables.

Notes

For make-ahead options, chop the vegetables and marinate the chicken in the sauce a few hours ahead. Store leftovers in the fridge for up to 3 days. Gently reheat on the stove in a skillet with a splash of water or broth to avoid drying it out.
