  • 1 cup bell peppers, sliced
  • 1 cup onion, sliced
  • 1 can black beans, rinsed and drained Can substitute with pinto or kidney beans.
  • 1 can corn, drained
  • 1 cup salsa Consider experimenting with different salsas.
  • 2 cups cooked rice For lower carbs, try cauliflower rice.

For the Topping

  • 1 tablespoon fajita seasoning You can make your own using chili powder, cumin, garlic powder, and onion powder.
  • to taste Salt and pepper
  • 1 cup shredded cheese Mix of mozzarella and cheddar is recommended.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the cooked chicken, bell peppers, onion, black beans, corn, salsa, cooked rice, fajita seasoning, salt, and pepper. Mix thoroughly until everything is evenly coated.
  • Transfer the mixture into a greased baking dish and spread it evenly.
  • Top the mixed ingredients with shredded cheese, covering the entire surface.

Baking

  • Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and allow it to cool for a few minutes before serving.

Notes

Ensure your rice is not overcooked to maintain good texture. Adjust seasoning to your taste and consider layering extra veggies for added flavor.
