Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Rub the chicken with olive oil, salt, pepper, garlic powder, and paprika.
  • Place the chicken in a roasting pan and surround it with chopped vegetables.

Cooking

  • Roast in the oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75°C).
  • Let the chicken rest for 10 minutes before carving and serving with the roasted vegetables.

Notes

For extra crispy skin, dry the chicken with paper towels before applying the olive oil and seasoning. Mix different vegetables for added color and taste.
