For the Meatloaf Base

  • 1 cup breadcrumbs
  • 1/2 cup shredded Swiss cheese

  • 1/4 cup chopped parsley
  • 1 clove garlic, minced
  • 1 ea egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup milk

For the Sauce

  • 1/2 cup chicken broth
  • 1/4 cup Dijon mustard

Preparation

  • Preheat your oven to 350°F (175°C). This ensures the meatloaf cooks evenly.
  • In a large mixing bowl, combine the ground chicken, breadcrumbs, Swiss cheese, diced ham, parsley, garlic, egg, salt, pepper, and milk. Mix until everything is thoroughly combined. The mixture should be moist but hold together without being overly wet.
  • Shape the mixture into a loaf form and place it in a baking dish for a beautiful presentation once baked.
  • In a small bowl, mix the chicken broth and Dijon mustard until well blended.
  • Pour the sauce mixture over the meatloaf to add moisture and flavor during baking.

Cooking

  • Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 165°F (74°C). Use a meat thermometer to check the doneness.
  • Once baked, let the meatloaf rest for 10 minutes before slicing and serving. This allows the juices to redistribute.

Notes

Make-Ahead: The meatloaf can be prepped ahead by mixing the ingredients a day in advance and storing in the fridge. Freeze for longer storage, wrapped tightly.
