Ingredients

Main Ingredients

  • 2 pieces flatbreads store-bought or homemade
  • 1 cup cooked chicken breast grilled or rotisserie, sliced or chopped
  • 1 cup romaine lettuce chopped
  • 0.25 cup Caesar dressing homemade or store-bought
  • 0.25 cup Parmesan cheese freshly grated
  • 0.5 cup mozzarella cheese shredded, optional for melting
  • 1 tsp olive oil for brushing
  • salt and black pepper to taste

Optional Toppings

  • cherry tomatoes, turkey bacon bits, crushed croutons, red onion slices, fresh cracked pepper, balsamic glaze as desired

Instructions

  • Preheat: Heat oven to 400°F (200°C). Place flatbreads on a baking sheet and lightly brush with olive oil.
  • Layer base: Sprinkle each flatbread with mozzarella (if using). Evenly distribute the cooked chicken; season lightly with salt and pepper.
  • Bake: 8–10 minutes, until the edges are golden and the cheese is melted.
  • Finish: Cool 1–2 minutes. Top with chopped romaine, drizzle with Caesar dressing, and sprinkle with Parmesan. Add any optional toppings (tomatoes, bacon bits, crushed croutons).
  • Serve: Slice into wedges or squares and serve immediately while the base is warm and crisp.

Notes

Tips: Toast flatbreads briefly before topping for extra crispness; add lettuce and dressing only after baking; use a high-quality Caesar and freshly grated Parmesan for best flavor.
Make-ahead: Bake base with chicken/cheese, cool, and store airtight. Reheat in oven/air fryer, then add romaine and dressing just before serving.
Variations: Spicy—use spicy grilled chicken or red pepper flakes. Vegetarian—swap chicken for crispy chickpeas or roasted mushrooms. Gluten-free—use GF flatbread or cauliflower crust. Avocado twist—add sliced avocado and a little lemon zest. BBQ Caesar—mix Caesar with a touch of BBQ sauce; add grilled corn.
Allergen note: Pork- and alcohol-free as written; use gluten-free flatbread and dairy-free cheeses/dressing if needed.
