Ingredients
  

For the Sandwich

  • 2 slices whole grain or sourdough bread
  • 0.5 piece ripe avocado mashed with a pinch of salt and lemon juice or sliced
  • 1 breast grilled chicken sliced (use leftover or rotisserie if preferred)
  • 2 slices provolone or mozzarella cheese
  • 1 tbsp light mayo or Greek yogurt optional
  • 1 tsp Dijon or honey mustard optional
  • butter or olive oil for toasting

Optional Add-Ons

  • tomato slices, baby spinach or arugula, red onion rings, pickles or banana peppers, fresh basil or parsley as desired

Instructions
 

  • Prep: Grill or slice pre-cooked chicken. Mash avocado with a pinch of salt and a few drops of lemon or lime (or slice). Gather optional spreads and add-ons.
  • Assemble: Spread mayo and mustard on the inside of each bread slice (optional). Layer cheese, sliced chicken, avocado, and any extras. Close sandwich; lightly butter/outside-brush with oil.
  • Grill: Heat a skillet or grill pan over medium. Cook sandwich 3–4 minutes per side, pressing gently, until bread is golden and cheese melts. (Use a panini press if available.)
  • Serve: Slice in half and serve hot with a side salad, fruit, or baked sweet potato fries.

Notes

Healthier swaps: Use whole grain or gluten-free bread; reduced-fat cheese or a single slice; swap mayo for hummus or extra avocado. Boost protein with high-protein bread or add egg whites.
Flavor twists: Spicy (jalapeños or hot sauce), Caprese (basil, tomato, balsamic drizzle), BBQ (shredded BBQ chicken + cheddar), Pesto (pesto spread + sun-dried tomatoes).
