  • 2 pounds baby potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup ranch dressing
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Preparation

  • Preheat the oven to 400°F (200°C).
  • Wash and halve the baby potatoes.
  • In a large bowl, combine the potatoes, olive oil, garlic powder, onion powder, salt, and pepper. Toss to coat.
  • Spread the potatoes on a baking sheet in a single layer.

Cooking

  • Roast in the oven for about 25-30 minutes, or until the potatoes are tender and golden brown.
  • Remove from the oven and drizzle the ranch dressing over the hot potatoes.
  • Sprinkle shredded cheddar cheese on top and return to the oven for an additional 5 minutes, until the cheese is melted.
  • Garnish with chopped green onions if desired and serve warm.

Notes

Cut the baby potatoes into even halves for even cooking. Don't skip tossing in olive oil and seasoning to achieve a crispy texture. Add toppings like bacon bits or diced tomatoes for extra flavor.
