  • 0.5 cup sliced mushrooms
  • 0.25 cup chopped onions
  • 1 cup fresh spinach

For the Cheese

  • 0.5 cup shredded Gruyere cheese

Preparation

  • In a skillet, heat the olive oil or butter over medium heat until ready.

Cooking

  • Add the chopped onions and sliced mushrooms to the skillet. Sauté until softened, about 5 minutes.
  • Add the fresh spinach to the pan and cook until wilted, stirring frequently.
  • In a bowl, whisk together the eggs with salt and pepper until well combined.
  • Pour the egg mixture into the skillet over the sautéed vegetables.
  • Allow the edges to start setting, which usually takes 1-2 minutes.
  • Once the edges are set, sprinkle the Gruyere cheese on top of the omelet.
  • Gently fold the omelet in half using a spatula and cook for an additional minute or until the cheese melts and the eggs are fully cooked.
  • Carefully slide the omelet onto a plate and serve hot.
