Preparation

  • Thinly slice the red onions and place them in a medium bowl.
  • Add fresh lime juice to the bowl, gently tossing to coat the onions.
  • Let the mixture sit for at least 15 minutes to soften the onions.
  • Add chopped cilantro and parsley, tossing to combine.
  • If desired, add minced serrano chiles for heat.
  • Optionally add sugar to balance the acidity.
  • Add tomatoes and red bell pepper, then drizzle olive oil over the salad.
  • Toss gently to combine all ingredients.

Serving
