Ingredients
  

For the Chicken

  • 2 pounds boneless skinless chicken thighs
  • 2 tablespoons avocado oil Can substitute with olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried mustard

For the Sauce

  • 1 cup BBQ sauce Plus more for serving

Instructions
 

Marinating Chicken

  • Add chicken to a large sealable container with avocado oil, kosher salt, black pepper, garlic powder, onion powder, smoked paprika, and dried mustard. Toss to coat and refrigerate to marinate for at least an hour, or up to overnight.

Preheating and Preparing

  • Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  • Toss the marinated chicken with 1/4 cup of BBQ sauce, reserving the rest for later, and space chicken thighs evenly on the baking sheet.

Baking Chicken

  • Bake the chicken in the preheated oven for 15 minutes.
  • Flip the chicken, brush with the reserved BBQ sauce, and bake for an additional 10 minutes.

Broiling

  • Increase the heat to broil, flip the chicken again, and brush with more BBQ sauce. Broil for 5-6 minutes until the chicken becomes crispy and cooked through.
  • Use a meat thermometer to ensure the chicken reads at least 165°F (74°C) internally.

Notes

Consider batch cooking and freezing leftovers for future meals. Let the chicken rest for a few minutes after cooking for juicier meat. Adjust spices based on preference and watch closely while broiling.
