Ingredients
  

Pasta and Sausage

  • 8 oz bowtie pasta Can substitute with any preferred pasta shape.
  • 2 cups andouille sausage Can substitute with any preferred sausage.

Vegetables and Seasoning

  • 1 can diced tomatoes (14.5 oz)
  • 1 tablespoon Cajun seasoning Adjust to taste.
  • Salt and pepper to taste Salt and pepper Use as desired.
  • 2 tablespoons olive oil For cooking the sausage.

Cheese

  • 2 cups shredded cheese (cheddar or your choice) Feel free to mix cheeses.

Instructions
 

Preparation

  • Cook the bowtie pasta according to package instructions until al dente, then drain.
  • In a large pot, heat olive oil over medium heat.

Cooking

  • Add the sausage and cook until browned.
  • Stir in the diced tomatoes and Cajun seasoning, and let simmer for 3-4 minutes.
  • Add the cooked pasta to the pot, mixing well.
  • Stir in the shredded cheese, letting it melt and combine fully.
  • Season with salt and pepper to taste.

Serving

  • Serve hot in bowls and sprinkle with extra cheese or parsley if desired.

Notes

For extra flavor, try adding bell peppers or onions when cooking the sausage. Adjust spice level with hot sauce or red pepper flakes. You can substitute sausage with shrimp or chicken, and choose any pasta shape you like.
