  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning Adjust based on spice preference.
  • 8 ounces pasta (like penne or fettuccine) Any pasta shape works.
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth Add a splash when reheating.
  • 1 cup bell peppers (sliced)
  • 1 cup onions (sliced)
  • to taste Salt and pepper
  • to serve Parmesan cheese For serving.
  • for garnish Fresh parsley

Instructions
 

Cooking

  • Cook the pasta according to package instructions. Drain and set aside.
  • In a bowl, coat chicken breasts with Cajun seasoning.
  • In a skillet, heat olive oil over medium heat. Add chicken and cook until browned and cooked through, about 7-8 minutes per side. Remove and slice.
  • In the same skillet, add sliced bell peppers and onions, and sauté until tender.
  • Stir in chicken broth and bring to a simmer. Add heavy cream and mix well.
  • Add the cooked pasta and sliced chicken back to the skillet. Toss to combine.
  • Season with salt and pepper to taste.

Serving

  • Serve hot, garnished with Parmesan cheese and parsley.
  • This dish pairs well with a simple side salad or warm garlic bread.

Notes

To store leftovers, let the pasta cool completely, place in an airtight container, and refrigerate for up to three days. Reheat in a skillet over medium heat, adding a splash of chicken broth or cream to restore creaminess.
