  • 1 medium butternut squash, peeled, seeded, and cubed
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Preparation

  • Preheat the oven to 400°F (200°C).
  • Steam or boil the butternut squash until tender, about 15-20 minutes.
  • Drain the squash and mash it well.
  • In a large bowl, combine the mashed squash, breadcrumbs, Parmesan cheese, egg, olive oil, garlic powder, salt, and pepper.
  • Mix until everything is well combined.
  • Shape the mixture into small tot shapes.
  • Place the tots on a baking sheet lined with parchment paper.

Cooking

  • Bake for 20-25 minutes, or until golden brown and crispy.
  • Let cool slightly before serving.
