  • 1 medium butternut squash, peeled and sliced
  • 1 cup heavy cream
  • 2 tablespoons fresh sage, chopped
  • 2 cloves garlic, minced
  • 2 shallots shallots, minced
  • 1 cup grated cheese (e.g., Gruyère or Parmesan)

Preparation

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a baking dish with butter.
  • In a saucepan, sauté the shallots and garlic in a little butter until softened.
  • Add the heavy cream and sage to the saucepan, and season with salt and pepper. Stir until combined.
  • Layer the butternut squash slices in the baking dish, pouring the cream mixture over the top.
  • Sprinkle grated cheese evenly over the top.

Baking

  • Cover the dish with foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 15-20 minutes, or until the squash is tender and the top is golden brown.
  • Let cool slightly before serving.

Notes

Serve warm as a side dish. It pairs well with roasted meats, poultry, and a fresh salad. For leftovers, store in an airtight container in the refrigerator for 3-4 days. Reheat in the oven or microwave before serving. Experiment with herbs like thyme or rosemary for added flavor.
