Ingredients
  

For the Base

  • 8 oz pasta (your choice) Whole wheat or gluten-free pasta can be used for a healthier option.
  • 2 pieces chicken breasts, diced Substitute with cooked chickpeas or tofu for a plant-based version.

For the Sauce

  • 2 cups cherry tomatoes, halved Any fresh tomatoes can be used if cherry tomatoes are unavailable.
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced Be careful not to burn the garlic.
  • 1/4 cup balsamic vinegar Red wine vinegar can be a suitable alternative.
  • 2 tbsp olive oil
  • Salt and pepper to taste Adjust seasoning generously.

To Serve

  • Extra fresh basil for garnish (optional)

Preparation

  • In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the halved cherry tomatoes and balsamic vinegar to the skillet, and simmer for 5 minutes.
  • While the sauce is simmering, cook the pasta according to package instructions. Drain and set aside.
  • Once the tomatoes have softened, stir in the cooked pasta, chopped basil, and season with salt and pepper. Mix until well combined.
  • Serve warm, garnishing with additional fresh basil if desired.

Notes

Consider using heirloom tomatoes for a pop of color and different tastes. You can pre-cook the chicken and prepare the sauce a day ahead to save time. This dish works well for meal prep; just store the sauce and pasta separately until you’re ready to eat.
