Preparation

  • Preheat your oven to 375°F (190°C) and prepare a muffin tin with paper liners or a light coating of grease.
  • In a bowl, combine the wheat bran and buttermilk. Allow it to rest for approximately 10 minutes to absorb moisture.

Mixing Ingredients

  • In another bowl, whisk together the brown sugar, vegetable oil, and egg until well combined.
  • Incorporate the bran mixture into the wet ingredients and stir until just mixed.
  • In a separate bowl, combine flour, baking powder, baking soda, and salt. Gently fold this dry mixture into the wet ingredients until just combined; avoid overmixing.
  • Spoon the batter evenly into the muffin cups, filling each about two-thirds full.

Baking

  • Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack.

Notes

For easy morning prep, consider preparing the batter the night before and refrigerating it. You can also experiment with spices like cinnamon or nutmeg for added flavor.
